Zucchini Waffles

Zucchini, eggs and communists in the Obama White House have a way of piling up. Fortunately, I've found a kid-friendly way to deal with zucchini and eggs- Zucchini Waffles.

  • 5 eggs
  • 3 cups grated zucchini
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon white sugar
  • 1/2 teaspoon salt
  • 3 tablespoons oil
  • 5 teaspoons baking powder
  • 1/4 cup butter, melted
  • 1 cup milk
You may need slightly more or less milk. Whisk lightly until you have a cake-batter consistency. Bake 'em up in your waffle iron and throw some syrup on them and the kiddies will be scarfing down their vegetables! Freeze leftovers for a quick breakfast.

Or try them with Parmesan cheese and butter for a savory side dish.

Enjoy! I'm off to think up a recipe to get rid of the communists.

  1. My mom makes a salsa that uses Zucchini instead of tomatoes.

  2. Mmmm, that sounds GOOD. I'm off to find a recipe...

  3. I'll be trying this - our zucchinis are not quite ready - but when they are, it'll be Katie bar the door!

  4. Yum! What a great idea. I bet my peep will love them :)

  5. also, really nice still life photo.

  6. communist removal: buy Visine???? you know, "it gets the red out." ha!

  7. Thanks for the zucchini salsa idea, Trestin. I made it last night and it is amazing!
