Zucchini Waffles

Zucchini, eggs and communists in the Obama White House have a way of piling up. Fortunately, I've found a kid-friendly way to deal with zucchini and eggs- Zucchini Waffles.

  • 5 eggs
  • 3 cups grated zucchini
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon white sugar
  • 1/2 teaspoon salt
  • 3 tablespoons oil
  • 5 teaspoons baking powder
  • 1/4 cup butter, melted
  • 1 cup milk
You may need slightly more or less milk. Whisk lightly until you have a cake-batter consistency. Bake 'em up in your waffle iron and throw some syrup on them and the kiddies will be scarfing down their vegetables! Freeze leftovers for a quick breakfast.

Or try them with Parmesan cheese and butter for a savory side dish.
